Indeed, in order to carbonate beer you have to either increase the pressure massively to around two atmospheres (30 psi, 2 bar) guage pressure or you cool it down to close to zero and it will just eat CO2 with less than one atmosphere guage pressure. At 2C and 2 bar you can carbonate a keg in just 5 minutes by rocking it around to increase the surface area.
At 2C you can slowly, over two minutes, release the keg pressure then open the keg and the CO2 will not suddenly all come out of the beer; CO2 likes to stay in water so it will still taste carbonated. If you over-carbonate beer then you need to allow the beer to heat up to near room temperature and also release any pressure for the beer to get rid of the excess CO2. Just like in your glass in the pub.
The other aspect is that carbonation causes beer and water to become slightly acidic, like the oceans do. This is why we have soda water; the carbon dioxide forms carbonic acid and baking soda, which is a base, is added to neutralise the acid, an acid that you can taste without the soda and/or other neutralising additives. As brewers we use Calcium Hydroxide Ca(OH)2 and Baking Soda NaHCO3 as our main base additives, we also add other minerals via acids, as well as via table salt. You may see these, especially table salt, also listed on the side of a can of soda.
Most home brewers can tell you this, so why the oceans (which contain most of the earth’s CO2) would work in reverse, not releasing CO2 when the seas warm (the opposite to what actually happens), is something that needs to be explained by the climate scammers.
